Join Ecology Director Shane Hardy for a maple sugaring experience! Maple sap is a local, sustainable alternative to cane sugar, and can be used to create syrup, maple sugar, and even tree sap beverages. We’ll show you the equipment we use, discuss various collection and processing methods, and talk about how climate change may affect maple sugaring in the future. If the maple sap is flowing, we may even get to taste some right out of the tree. Come learn about Stone Barns Center’s small maple sugaring operation, and enjoy the sweetness that late winter can provide.
